We don't want to squash your hopes, but by now even the most stubborn of us have to admit that summer is over and autumn has taken it's place. With Halloween just around the corner and copious amounts of Pumpkin Spiced Lattes being consumed, there is no denying that the new season is already in full swing. So to celebrate the changing leaves (and temperature!) we have brought you 15 recipes using everyone's favourite fall vegetable that will make the transition into the colder days much, much more enjoyable. 

 

1. Starting off with a classic that we are sure most of you have had before - butternut squash soup. However this recipe for a Butternut Squash + Coconut Soup from Set the Table is with a twist- veering off the traditional version by introducing some Thai flavours into the mix.

 

 

2. Speaking of Set the Table, there is also a delicious Roasted Butternut Squash Risotto recipe that can be found on the blog.

 

 

3. Keeping with the Italian theme, this Butternut Squash and Sage Lasagna by Martha Stewart is absolutely fantastic. It is bound to warm you up during this fall and will make any guest feel at home :)

 

 

4. Another great find on Martha's website is this recipe for Twice Baked Butternut Squash that is really easy to make and is a great addition to a festive meal. Left overs are a great office lunch as well.

 

 

5. Speaking of side dishes, be sure to give this Pumpkin Sage Polenta by Kitchen Confidante a try this season! It sounds so good you could even have it as a main course and it's a great one to impress your guests.  

 

 

6. This Roasted Pumpkin with Chili Yogurt and Coriander Sauce, like the polenta, is the perfect side dish transformed into a delicious and healthy main course. So go over to Drizzle & Dip to get the full recipe.

 

 

7. One thing we never thought of turning pumpkin into is a dip, but this recipe by Heather Christo has enlightened us on yet another use of this awesome root vegetable! White Bean Pumpkin Hummus is the perfect healthy afternoon snack. 

 

 

8. Butternut Squash and Goats Cheese Ravioli, need we say more?? This autumn dish is great for all you pasta lovers out there and thanks to Half Baked Harvest you can make it at home and feel like a super chef. 

 

 

9. Also pasta based but with a Greek twist, this Pumpkin, Feta and Pea Pastitsio by Souvlaki for the Soul is another one of our favourites heartwarming dishes. It's not only super yummy  but it's also another great recipe for all you leftover lovers! :)

11. This Pumpkin and Feta Tart by My Kitchen Affair is one of those dishes we just can't get enough of. We strongly recommend that you'll give it a try, we guarantee you won't regret it!

12. Going from savory to sweet we cant help but post this Moist Skinny Pumpkin Bread recipe by iFOODreal. Not only is it super delicious, it is also one of the healthier deserts you can make.

 

 

13. If you are looking for a cake to impress your friends with why not give this Pumpkin Carrot Cake by Baker by Nature a try. We are sure they'll love it, especially since it comes with a delicious cream cheese frosting!

 

 

14. Of course we can not get to the end of this post without giving you a recipe for a pumpkin classic - pumpkin pie.
